The goals and objective of La Flamme Bleue are student-centered. Our main goal is to hone the culinary skills of our students, to instill to our future chefs social and leadership values, and to prepare them to be one of the leading chefs of the culinary industry. La Flamme Bleue Center for Culinary Arts aims to be the breeding ground for excellent and socially-responsible chefs. It is our objective to provide a significant increase in the number of Ilonggo chefs who are successful in their chosen career by raising the culinary standards in the province. We see our students to be the next executive chefs of different restaurants in the country.

Company Background

La Flamme Bleue Center for Culinary Arts was founded by Chef Donald Infante, a born cook with burning passion for culinary arts. He refined his culinary skills in Pampanga, the Culinary Capital of the Philippines. He graduated top of his class and he then started teaching culinary arts for three years. Moreover, Chef Don acquired culinary know-how in one of the top luxury hotels in Missouri, USA. When he has flown back to his hometown in Jaro, Iloilo. He saw an opportunity to answer some problems. For Ilonggos in Iloilo city, there used to be several obstacles that made it very challenging for someone who wanted to study culinary arts. The most notable culinary schools in the Philippines are not in Iloilo city, they are in Manila. Aside from their already expensive tuition fees, you will need to relocate to Manila. On the other hand, the culinary schools in Iloilo city are affordable but the standards are significantly lower in terms of facilities and equipment. Most importantly, the learning experience is subpar compared to the schools in Manila. It was frustrating to know that Ilonggos who were trying to become chefs, trying to learn more about cooking, or simply trying to fulfill a lifelong passion, had no options whatsoever.  Thus, La Flamme Bleue Center for Culinary Arts came to life. La Flamme Bleue Center for Culinary Arts was launched so that Ilonggos could master the culinary arts with learning experiences, facilities, and equipment that are comparable to those from the most notable schools in the country at a less expensive rate. With competitive tuition fees, competently passionate culinary instructors, and friendly environment, students will experience a culinary journey that will set them apart in the country and even abroad.

The day-to-day culinary classes of the company is managed by Chef Donald Infante with the help of passionate instructors and a focused management team composed of competent individuals in their respective fields.

The key activities of La Flamme Bleue are divided into two streams.

The primary business of the company is to provide its students first-rate culinary education through its competent and passionate culinary instructors, modern facilities and friendly environment.

Incidental to its primary business is Matchstix by La Flamme Bleue, a restaurant alongside the culinary school built to provide its students real-life experience and certain restaurant management skills they might need in the future.

Lifestyle Classes

La Flamme Bleue Center for Culinary Arts, identified a series of classes and workshops that can deliver an excellent education to its students. It provides series of lifestyle classes—short one-day to one-week courses that introduce students to specific culinary techniques, cuisines and specialty courses.

CERTIFICATE IN CULINARY ARTS

This is a 6-month program that teaches students the fundamentals of Culinary Arts. Students will learn the very basic and advance skills they will need to perform in an international culinary setting. This 20-week long journey will include the proper knife skills, cooking methods and basic baking skills. Moreover, the different activities designed throughout the program will teach and test the students’ creativity and passion while nurturing individual skills and teamwork.

DIPLOMA IN CULINARY ARTS

This one year course is designed for students who wish to learn the Fundamentals of Culinary Arts and be introduced to International Cuisines. After the 6-month program of intensive culinary arts studies, the students will then have to experience the cuisines of the world. This part of the program will allow them to compete further in the international level. Professional Chefs of different cuisines will have students expanding their palettes.

Market Opportunity

Substantial market opportunities are presented to the company now as the different industries that employ culinarians are forecasted to grow. Full-services restaurants, will have compounded annual growth rate of 9.1% within four years (Euromonitor). TESDA also forecast that interest in culinary-related courses in Western Visayas is increasing. In order to meet the needs of the growing industry, the business segment will require additional workers particularly world-class chef. With the increasing but unsatisfied demand, La Flamme Bleue saw the need and opportunity to establish a culinary school that will provide high-quality education.
